For several generations, the two families that make up Javier Guardiola's Guardi Wines have been winegrowers on various estates with their own wine press: on one side since before 1750 in Villamartín, Cádiz, and on the other, Barón de Gracia Real, since 1910 in Sevilla. The family's winegrowing tradition goes back to the 18th century in Villamartín. Since ancient times the town made a wine that became very famous and was called Pajarete, after the plot where the vines that produced it were planted, the same plot where the castle of Matrera stands.
