About the winery
Surrounded by the La Constancia vineyard, the winery is where the grapes are received and crushed in the lagar (production winery): the grapes are mechanically trodden and pressed in continuous hydraulic presses, then fermented in AISI-316L stainless steel tanks with cold-water cooling jackets. To keep fermentation under control, the temperature ideally ranges between 18 and 21 degrees, with the corresponding winemaking adjustments.
