The possibility of storing wines from different vintages and the need to supply the market, at the request of merchants, with stable quality and style gave rise to one of the fundamental contributions of Jerez winemaking: the ageing method known as «Criaderas y Soleras». In short, different historical circumstances have gradually shaped the identity of our Jerez wines, just as they have shaped their production, their trade and their enjoyment.
