Tempranillo, here called Cencibel, is the main variety and the base of balanced reds, accompanied by Garnacha and a little white Verdejo. The vineyards sit on hillsides and poor soils, with a continental climate of strong thermal contrasts that favours slow ripening. Reds that pair with roasts, lamb and inland Castilian cuisine.
The D.O. Uclés is one of the youngest denominations and regulatory councils in Spain, since its creation date is 2002, after the separation of some of its wineries from the DO La Mancha. Even so, the denomination is located in an area of Castilla la Mancha with a long history of producing great wines.
The DO Uclés is also one of the smallest denominations, made up of five wineries with reduced productions but based on principles of quality and good workmanship on the part of the farmers, winemakers and oenologists that make them up.
The Uclés Denomination of Origin covers various municipalities spread between the provinces of Toledo and Cuenca. In Cuenca we find districts and plots of Acebrón (El), Alcázar del Rey, Almendros, Belinchón, Carrascosa del Campo, Fuente de Pedro Naharro, Horcajo de Santiago, Huelves, Huete, Langa, Loranca del Campo, Paredes, Pozorrubio, Rozalén del Monte, Saelices, Tarancón, Torrubia del Campo, Tribaldos, Uclés, Valparaíso de Arriba, Valparaíso de Abajo, Vellisca, Villamayor de Santiago, Villarrubio and Zarza de Tajo. From Toledo we find districts and plots of Cabezamesada, Corral de Almaguer and Santa Cruz de la Zarza.
The vinification of the grape coming from the vineyards located in the geographical area will be carried out in wineries located in the municipalities included within that area and registered in the Register of Agricultural and Food Industries of Castilla-La Mancha.
It includes the plots and sub-plots located in the following municipalities of the provinces of Cuenca and Toledo.
The vineyards lie at an altitude ranging from the 500 m of its lowest area in the western part to the 1200 m in the highest area of the eastern part of Castilla La Mancha.
A continental climate predominates, typical of the plateau and of Castilla La Mancha. It is an area with scarce rainfall and significant temperature changes throughout the year that make it a particular area for certain types of varietals.
A winegrowing history, a terrain of special qualities, ideal climatic conditions, and the background of these eight wineries with long experience in the cultivation of the vine in these lands, as well as in the treatment of its fruit in the winepress, have driven the creation and development of the Uclés Denomination of Origin, which initially protected red wines of proven quality and exceptional sensory profile. Recently the production of rosé, white and sparkling wines under this Denomination has been authorised.
