Baldovar 923 is a mountain winery in the hamlet of Baldovar, in Alpuente, in the Serranía del Alto Turia and within the D.O. Valencia; its name recalls the 923 metres of altitude at which it stands. Its dry-farmed vines grow between 800 and 1,200 metres on limestone and siliceous soils, farmed organically and biodynamically, with what comes out of the field returned to it as compost, and intervention in the cellar is kept to a minimum. Merseguera takes centre stage in whites such as Cañada París, Arquela, the skin-contact Rascaña and the ancestral-method sparkling Vizcota, while the range is rounded off by the rosé Pieza la Moza, the Bobal Berandía and Cerro Negro, made from Mencía. The visit, in small groups, shows how each wine is made and ends with a tasting of four wines accompanied by treats from the village bakery.
