Bodegas Tierra Savia is an organic winery in Cazalla de la Sierra, in the Sierra Norte de Sevilla natural park, founded in 2013 by Pedro Cano and José Antonio Acosta, both growers and winemakers; Acosta is also its oenologist. Its dry-farmed vines lie at around 700 metres above sea level, among cork oak and holm oak dehesas, on red slate soils, and are farmed organically and harvested by hand. Some of its wines are aged in local clay amphorae more than 200 years old, as well as in used barrels. Its projects include Mirlo, two Viognier wines with and without barrel ageing; Zaranda, a Tempranillo aged in French and American oak; and Piu, experimental amphora wines from native varieties. It offers guided visits with tastings.
