Libre y Salvaje is an organic winery in Almonacid de la Sierra, at the foot of the Sierra de Algairén, within the D.O.P. Cariñena. Its central idea is recovery: native varieties, abandoned vineyards, old working methods and a winery more than five hundred years old. They grow old vines in the hills using organic farming and regenerative techniques, and intervene as little as possible in the winemaking. The winery has four levels so it can work by gravity, and the wine rests in underground caves. Its range is organised as in Burgundy, into village, site and single-plot wines. The visit starts at the top, with views over the land and vineyard, goes down to the winemaking room and the caves, and ends with a tasting of three wines and local products in an 18th-century palace.
