Dominio de Gallo works vineyards inside the Arribes del Duero Natural Park, in the province of Salamanca and within the D.O. Arribes, at more than 800 metres above sea level on granite and slate soils. Its project focuses on recovering very rare native varieties, such as Tijonera or Verdejo Colorado and Bruñal, alongside others like Juan García, Garnacha, Godello and Albariño. Grapes are picked by hand and the winemaking is artisanal, with native yeasts, fermentation in stainless steel and wines bottled unfiltered. Its labels include the rosé Inusual, made from Verdejo Colorado; the whites Infrecuente and Insolente; and the reds AÚN..., a barrel-aged Bruñal, and AHORA, which blends Garnacha, Bruñal and Juan García.
