Encomienda de Cervera is an estate in Campo de Calatrava, about twenty minutes from Almagro, lying between 750 and 850 metres above sea level in the heart of the volcanic massif. There are several volcanoes on the property, including the Maar de la Hoya de Cervera, declared a Natural Monument. The estate belonged to the Counts of Valdeparaíso, who received it as an encomienda from Philip V in the 18th century. Today it farms vines and olive trees organically to make volcanic wines and extra virgin olive oil using only its own fruit. It works with reds such as Tempranillo, Cabernet Sauvignon, Graciano, Petit Verdot and Syrah, and whites such as Airén, Albariño, Verdejo, Sauvignon Blanc, Gewürztraminer and Viognier, with fermentation in cement vats and barrel ageing. It offers guided visits that include the volcano, and tastings.
