José y Miguel Martín is a family business in Bollullos Par del Condado that combines a winery and a cooperage. The family has been making wine since 1917 and counts four generations and more than sixty years of experience as coopers. It makes wines and vinegars under three designations of origin, Condado de Huelva, Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda, and controls the process from selecting the grapes at harvest time. A large part of its activity focuses on seasoning casks for distilleries around the world: it has its own sawmills, makes its casks in its own cooperage and seasons them with its own wines. It also works with renewable energy and a zero-waste policy in which leftover materials go back into the production chain.
