Bodegas Gaia is a small artisan winery in Hervás, in the Ambroz valley in northern Cáceres. It occupies a restored century-old wine press house, half underground in the old Jewish quarter, with rubble-stone walls set into the rock, chestnut beams and old pieces such as a large cage press, treading basins and chestnut vats. Its aim is to bring vine growing back to an area where little more than homemade pitarra wine survived. The star grape is Rufete, grown in very old vineyards on sandy granite soils, sometimes on terraces among olive trees: El Regajo is a red from Rufete and Tempranillo, La Somadilla a single-varietal Rufete and Nostos a clarete. It runs guided tastings with olive oil and cheese, vineyard walks and tours of the Jewish quarter.
