Bodega Fabio Coullet is the personal project of agronomist and winemaker Fabio Coullet in Almáchar, in Málaga's Axarquía, where vines climb very steep slate slopes and grapes are still brought down by mule. His philosophy puts people, terroir and grape first, with minimal intervention and native varieties such as Moscatel de Alejandría, Pedro Ximénez, Doradilla, Garnacha and the almost vanished Romé. His wines include Rome Conte, a Romé from Salares; Orange Peels, a skin-macerated Moscatel aged in amphorae; Ingénito, a Garnacha; Villazo, a barrel-aged Moscatel; Secuencial; a rosé Pét-Nat; a vermouth and Hereditas, a sweet wine from sun-dried grapes. The winery invites visitors to come and see it in Almáchar.
