In the D.O. Málaga the names given to the wine according to the ageing they have received are different from other designations in the country; here the wines aged up to 6 months are Pálidos (Pale), Nobles between 2 and 3 years, Añejo from 3 to 5 and Trasañejo when it is more than 5 years.
The Regulatory Council of the Málaga Designation of Origin, which works to look after the 40 affiliated wineries, has as its objectives the representation, guarantee, training, research, development and innovation of markets and the promotion of its wines.
The Málaga Wine Production zone is made up of 67 municipalities located in five geographical production areas which are Axarquía, Montes de Málaga, Norte, Manilva and Serranía de Ronda. Each of these areas is characterised by a distinct terrain, climate and soils.
The production zone covers 67 municipalities, divided into 5 zones that each have a distinct microclimate and distinct soils. Axarquía, which has a rugged terrain and a warm climate with hardly any rain.
The climate is very varied between one area and another of this PDO. The Axarquía region and the Western coast have a rugged terrain and a warm climate with hardly any rain. The Montes and Serranía regions are characterised as being the coldest and rainiest. The Northern area has a continental climate of cold winters and warm summers.
For the Málaga Designation of Origin: the production of the protected wines will be carried out with grapes of the varieties Pero Ximen (Pedro Ximenez), Moscatel de Alejandría, Moscatel Morisco (Moscatel de grano menudo), Lairén, Doradilla and Romé, of which Pero Ximen and the Moscateles are considered preferential.
For the Sierras de Málaga Designation of Origin: the production of the protected wines will be carried out with grapes of the following varieties:
White varieties: Pero Ximen (Pedro Ximenez), Moscatel de Alejandría, Moscatel Morisco (Moscatel de grano menudo), Chardonnay, Macabeo, Sauvignon Blanc, Colombard, Doradilla, Gewürztraminer, Lairen, Riesling, Verdejo and Viognier.
Red varieties: Romé, Cabernet Sauvignon, Merlot, Syrah, Tempranillo, Garnacha, Cabernet Franc, Pinot Noir, Petit Verdot, Graciano, Malbec, Monastrell, Tintilla (Tintilla de Rota).
