About the winery
The underground cellar is three centuries old and was built seven metres deep by digging its galleries by hand. These architectural features naturally maintain a constant humidity of 70-80% and a temperature of 11 to 14° all year round, making it ideal for ageing wine in barrel and bottle. A highlight of the winery is a traditional 14-metre Roman press beam, preserved in perfect condition.
