Simó de Palau is an artisan cava made in the village of L'Espluga de Francolí, in the Conca de Barberà district, a land with a great winemaking tradition. As a mark of deference to the land that hosts it, this artisan cava has taken the name of one of the founders of the village: Simó de Palau, Viscount of Bas, a descendant of Hug de Cervera. The origins of the Simó de Palau winery go back to the 12th century, when the Cervera family granted Arnau Moltó the exclusive right to build the mills of these lands, where vines were grown at that time for making wine.
