BODEGAS Carayol & Castellar

◍ Granada

About the winery

Bodegas Carayol & Castellar is a small family winery in Galera, in the north of Granada province, officially founded at the end of 2012 by Pedro Carayol and his wife, Inmaculada Castellar, after five years of trials with a native local grape, the white Gordal. With it they make their sparkling wines, a brut nature and a brut nature reserva from Gordal, Macabeo and Chardonnay, and a rosé from Gordal and Garnacha Tintorera, all handcrafted, with each bottle labelled, numbered and signed by hand. They farm around five hectares organically and work with IFAPA and the Altiplano de Granada Development Group on research into local varieties. They also make the still wines Los Pedros, in white and red.
