About the winery
Considered one of the cathedrals of wine, the 16th-century underground cellar is further proof of this family's dedication to winemaking. It comprises 1,200 square metres of underground galleries dug into rock, with the main gallery bored through stone. In 1992 an 800-square-metre underground extension was built to complete the barrel and bottle storage. ValSotillo is aged in this historic cellar in excellent conditions, naturally, at a constant temperature of 11-12ºC.
