Seeking differentiation, Victoria Ordóñez decided to include in her wines the native Pedro Ximénez variety from the Montes de Málaga, the quintessential grape of Málaga wines, since it was grown only in Málaga, and which, from the 17th to the 19th centuries, gave rise to Málaga wine and its international fame. The making of these wines, which were mostly dry, was abandoned after phylloxera until today. This is therefore a risky and innovative project, given the lack of references for this type of wine.
