About the winery
After a long tradition of making family cavas, Joan Carol's passion and restlessness led him to found Cellers Carol Vallès in 1996. He decided to settle in the old Can Parellada farmhouse, acquired by his grandparents more than 100 years ago. With the indispensable help of Teresa Vallés, Joan Carol began selling the cavas they had so carefully made for years: first “Parellada y Faura”, bearing his mother's surnames, and then “Guillem Carol”, bearing his son's name.
