About the winery
Caves Joan Bundó Pons is a small cava house in the Rectoria quarter of Pacs del Penedès, within the D.O. Cava. Their approach to the craft is simple: cava is born in the vineyard and from the work of the people who, harvest after harvest, go along with the effort of the land. They make a single cava by the traditional method with the three native Penedès varieties, Macabeu, Xarel·lo and Parellada. It is a Brut Nature that rests for at least two years on its lees, and every bottle is riddled and disgorged by hand. Pale in colour, with a fine and persistent bubble, it combines ageing notes with fruity hints and stands up well to roasts and game. They can often be found at the wine and cava fairs of the area.
