Cova da Xabreira is in Seadur, in the D.O. Valdeorras (Ourense), and takes its name from the covas, the traditional cellars dug into the hillside. Simón Val, raised in A Coruña but with childhood summers spent in Seadur, took over the family vineyard in 2010 and founded the project in 2019 when he acquired a second, adjoining cova. Today he farms around six hectares at some 500 metres, with vines over 50 years old, and makes wine only from his own grapes: mainly Godello along with native reds such as Brancellao, Merenzao and Mouratón. The most emblematic cova is now a zero-kilometre restaurant; the others host tastings, workshops and local festivities, and there are also e-bike routes around Seadur.
