About the winery
Dominio del Pidio is in Quintana del Pidio, a village in Burgos within the D.O. Ribera del Duero with a long winemaking history linked to the monastery of Silos. Instead of building a new winery, they restored an old sixteenth-century cellar quarter: five underground cellars and wine presses where all their wines are aged eighteen metres below ground, at a stable temperature all year round. The grapes come from small plots with vines up to a hundred years old, are fermented in concrete tanks and aged in French oak barrels. They make three limited-edition wines: a red of Tinto Fino with a little Albillo, a white of Albillo and a rosé from both. The visit goes down into the caves to tell the story of the place and how they make their wine.
