About the winery

El Celler de la Ibola is a family project in Aín, a small village in the Sierra de Espadán in Castellón, under the I.G.P. Castelló. It is run by Ainhoa and Román, who chose to return to the family's land to recover the area's vineyards and traditions, with small productions and hand harvesting. The range is varied: L'Ombria is a young, light Pinot Noir and La sonrisa de Vega a Pinot Noir aged for nine months; Aures is a more intense red; Silenci, a white made from red grapes; La mirada de Amaia, a Xarel·lo aged in French oak; Instant, a fresh rosé; and Ànfora, a skin-contact white with long maceration. They hold relaxed tastings in the open countryside and experiences with workshops, music and art among the vines.
