Bodegas Principia is in Fermoselle, between the Duero and Tormes rivers, within the Arribes del Duero Natural Park and the D.O. Arribes. It is run by Roberto Rodríguez Núñez, whose family comes from Fermoselle, and who makes wine in an 18th-century cellar carved into the rock, with round arches underground, where his ancestors already made wine. He farms some 8 hectares on slopes of poor, weathered granite soils following biodynamic principles, harvests by hand and makes wine without additives, without fining and with as little racking as possible. His wines are Orange and Auroras, from skin-fermented Malvasía castellana; El Espinar and Felipe, reds from Tinta Madrid, the latter with Rufete, Bastardillo Chico, Bruñal and Garnacha; and Bisabuelos, from Juan García.
