Sauvella is a winery in Orcau, in the Pallars, deep in the Catalan Pyrenees. Behind it is a Dutch family who settled in the area to revive a winegrowing tradition some two thousand years old, with winemaker Jeroen Nagtegaal in charge of production. They farm south-facing slopes using regenerative agriculture and make low-intervention natural wines, each with original artwork on the label. The range is broad: Luteum, an orange wine from Macabeo, the rosé Romance, a Sumoll, a pét-nat made by the ancestral method, Dolç, a sweet wine from sun-dried Garnacha, the oak-aged Luscinia wines and Qarant, a Syrah. By reservation they host tastings in their medieval cellar, from young wines to vintages no longer on the market, as well as walks through the dinosaur and tosca-stone landscapes of the surrounding area.
