La Danza Estacional de los Vinos: Una Celebración del Cambio

Wine changes with the seasons, or perhaps it is we who look for different things depending on the weather. Learning to sync the glass with the calendar is a simple way to enjoy each bottle more.

Spring: awakening freshness

With the first mild days, light and lively wines appeal. Young whites with good acidity and easy-drinking rosés fit the mood of the season: floral aromas, a clean feel on the palate and that joy that calls for a sunny terrace.

It is the time for bottles that don't ask for much ceremony, perfect for an aperitif or a light meal outdoors.

Summer: the glass that refreshes

When the heat sets in, serving temperature matters as much as the wine. Fresh whites, rosés and well-chilled sparkling wines are summer's allies, and there's no need to fear serving them even with ice if the moment calls for it.

  • Serve them cool, between 7 and 10 degrees, so they shine.
  • Sparkling wines give far more than just a toast: they accompany whole meals.
  • A light red, slightly chilled, also works on summer nights.

Autumn: body and warmth

The falling of the leaves coincides with the harvest and with a change of register at the table. Reds with a little more body appeal, whites with ageing and wines that go with stews and mushrooms. The palate asks for structure and deeper aromas, in tune with the dishes that return to the kitchen.

It is also the best time to get closer to the countryside: few experiences match seeing a harvest under way and understanding where everything we later drink comes from.

Winter: depth by the fire

The cold calls for wines with pedigree. Age-worthy reds, with tannins tamed by time, and a fortified or sweet wine to end the meal put the finishing touch to the season. They are bottles to drink without hurry, in good company and by the warmth of home.

None of this is a rigid rule. Many of us enjoy a powerful red in the middle of August or a fresh sparkling wine at Christmas, and that's perfectly fine: the seasons are a guide, not an imposition. The charm lies in letting yourself be swayed by the moment, the temperature and the company, and in discovering that the same wine can taste different depending on when and with whom you open it.

Letting yourself be carried by this natural cycle is an honest way to enjoy wine: each season has its glass, just as the vineyard has its rhythm.
