Red with red meat, white with shellfish: the usual combinations work, but they fall short. Off those rails there are plenty of pairings that surprise and that, when well thought out, make perfect sense.

Getting off autopilot

Repeating the classic pairings is comfortable, but also a little boring. The palate appreciates novelty, and often the most memorable successes come from combinations that at first glance seemed absurd. The key lies in understanding why they fit, not in throwing things together at random.

Spice and aromatic white

One of the most rewarding contrasts. Faced with a spicy or heavily seasoned dish, a red with tannins usually makes the burning sensation worse. An aromatic white with some fruit, floral notes and a touch of sweetness, on the other hand, soothes the heat and brings freshness. Asian dishes with spices, curries or chilli-based stews work very well with whites of this profile.

Wine and chocolate, a misunderstood classic

Chocolate is often considered the enemy of wine, but the problem is one of choice, not of concept. With an intense dark chocolate, a sweet or full-bodied fortified wine holds its own and creates a rounded end to the meal. What does not work is forcing a dry, tannic red against a very sweet dessert: there the clash is real.

Other pairings that deserve a chance

  • Sparkling wine and fried food: the bubbles and acidity cut through the fat of a fry-up like few things do.
  • Aged white and mature cheeses: the wine's structure stands up to the power of the cheese.
  • Rosé with pizza: it combines fruit, acidity and lightness without either masking the other.
  • Light, slightly chilled red with oily fish: it challenges the norm and works if you choose a low-tannin wine.

How to experiment without disasters

The rule that never fails is to match intensities and play with acidity to cut through fat and spice. From there, be bold: open two different wines with the same dish and compare. Getting it wrong also teaches, and at the table mistakes come cheap.
