Food and wine pairing is neither an exact science nor an exam you have to pass. It is a tool to make food and wine better for each other. With four clear ideas, you will stop improvising and start getting it right.

What a good pairing is after

The goal is balance: neither the dish overpowering the wine nor the wine crushing the dish. Sometimes this is achieved through affinity (flavours heading in the same direction) and other times through contrast (one element offsetting another). Both routes work; what matters is understanding what each bite and each sip is doing.

Before thinking about the label, look at the weight of the dish. A hearty stew calls for a full-bodied wine; a salad or a grilled fish, something lighter. Matching the intensity is the rule that saves a meal most often.

Whites, reds and everything in between

Each style has its territory, though the boundaries are more flexible than they seem:

  • Fresh, fruity whites: shellfish, white fish, vegetables and young cheeses. Their acidity cuts through the fat and heightens the taste of the sea.
  • Whites with ageing or more structure: poultry, rice dishes, fish in sauce.
  • Young reds: cured meats, pizzas, tomato-based pastas, light meats.
  • Full-bodied reds: red meats, game, stews and mature cheeses.
  • Rosés and sparkling wines: the great all-rounders, they go well with almost everything and rescue any moment of doubt.

The four factors that decide

Beyond colour, pay attention to these factors. The wine's acidity cuts through fat and refreshes. The tannins of a red soften with the protein and fat of meat, but clash with spice or oily fish. Sweetness balances spiced dishes. And the aromatic intensity should be evenly matched between plate and glass.

Learn by breaking a rule or two

The classic combinations exist because they work, but the best way to develop your own judgement is to experiment. Open two different bottles with the same dish and see how everything changes. That exercise teaches more than any manual.
