Rueda country, rural houses abound among pine woods and fields of verdejo, ideal for touring vineyards at leisure.
Those who prefer to combine winery visits with the city can stay in Segovia itself, beneath the Aqueduct, in charming hotels of the old quarter. To the east, Sepúlveda and Riaza offer stone lodgings beside the Hoces del Duratón, a fine starting point for tastings and walks.
The Segovian table revolves around the wood-fired oven. Roast suckling pig (cochinillo) is the undisputed jewel, with its crackling skin and tender meat, and the churro lamb competes on equal terms in any grill house in the province. The judiones of La Granja round off a hearty, flavourful repertoire.
These dishes call for full-bodied wines: a red from the Segovian Ribera del Duero pairs perfectly with the roasts, while a fresh verdejo from Rueda accompanies starters and cheeses. For dessert, the ponche segoviano, with its lattice of toasted sugar, ends the meal sweetly.
Segovia offers far more than tastings. The Hoces del Río Duratón, with its natural park and the monastery clinging above the canyon, invite hiking and canoeing. In the northeast, the red villages of the Ayllón mountains and the beech woods bestow postcard autumns.
The province treasures castles such as that of Coca, of Mudéjar brick, and that of Cuéllar. A day at the Royal Site of La Granja de San Ildefonso, with its gardens and Baroque fountains, easily combines with the wine route through the south of the province.
The Roman Aqueduct, the Alcázar on its rocky spur and the late-Gothic cathedral sum up centuries of history in the capital. The alleys of the Jewish quarter, the Romanesque churches and the sgraffito-decorated houses give character to an ensemble declared a World Heritage Site.
Outside the city, Romanesque art unfolds through Sepúlveda and its surroundings, and Coca preserves the memory of the emperor Theodosius. The tradition of wine and bread, together with pottery and the pig slaughter, is part of a living rural culture felt in the festivals and markets.
The Segovian outdoors is enjoyed around the Hoces del Duratón, where there are camping areas and campsites near Sepúlveda from which to set out to paddle or watch griffon vultures. The Sierra de Guadarrama, to the south, offers pine woods and streams for mountain lovers.
Those travelling by motorhome find service areas in several municipalities and quiet corners beside the fields of Rueda, in the west of the province. Riaza and the Ayllón massif, with their secluded nature, are another option for sleeping under the stars near the vineyard.
