The Albacete table is hearty and pastoral: gazpachos manchegos (galianos), atascaburras with cod and potato, moje and migas ruleras. Cured Manchego cheese and La Mancha lamb call for a red from Almansa made with garnacha tintorera, powerful and moreish.

From La Manchuela come fresh wines made with bobal that accompany rice-based serrano stews and the game of the Sierra del Segura. To finish, honey from the nearby Alcarria of Cuenca, mantecados and pumpkin sweets. Each district contributes its produce and its glass.

Albacete treasures the Cuchillería (cutlery craft) as its hallmark, with its Municipal Museum devoted to knives and blades. In the capital, the Modernist Lodares Arcade and the Archaeological Museum with the local Iberian Sphinx display centuries of history between the plateau and the Levant.

The castle of Almansa, one of the best preserved in Castilla-La Mancha, and the hanging houses of Alcalá del Júcar speak of frontiers and defences. The tradition of esparto grass, the September fair and the rural shrines weave the popular culture of the province.
